Wilted Spinach Bacon Salad

Wilted Spinach Bacon Salad 
One of my all time favorite salads!
pretty healthy... well, except for the bacon grease and a little sugar! 
serves 4+
I love using the enamel colander from the HOME SUPPLY Co. subscription box... functional & cute! Can't beat that!  

 

ingredients

4 cups of washed and dried baby spinach

8 slices of bacon diced 1” pieces 

1/4 cup white onion finely diced

1/2 cup of chopped pecans

1/2 red onion sliced thin

4 hard boiled eggs sliced

3/4 cup sugar    /    1/2 tsp. salt    /    1/2 tsp. pepper

1 T. cornstarch   /  1/2 cup apple cider vinegar  /  1/4 cup water

 

                       

directions

wash and dry the baby spinach

add sliced red onion, sliced hard boiled eggs,

coarsely chop pecans

slice mushrooms if you’d like

slice bacon into 1” pieces; cook until crisp

remove the bacon and drain on a paper towel

retain 1/4 cup of bacon grease or more... I like more!

add chopped white onion to the pan and cook until softened

approx. 5-6 min over medium heat

whisk together the sugar, cornstarch, salt, pepper

whisk in the water and apple cider vinegar

pour the above mixture into the pan with the bacon drippings and onion

bring to a simmer; whisk continually until thickened about 1-2 min.

add the bacon back into the pan with the dressing and stir

The dressing can be made ahead of time... refrigerated and then heat on the stove or in the microwave when you are ready to serve. Be sure to stir well. 

Dish individual salad servings and spoon warm/hot dressing over the spinach salad. Enjoy!
